Strawberry Princess Cupcakes

I was asked to make Strawberry Cupcakes for a recent order and loved the recipe that I found!
The cupcake consists of a white cake mixed with strawberry jello and fresh chopped strawberries.

The frosting is a decorating icing and was so easy to use. I added shortening to the frosting mix to help it keeps its shape and a hint of pink food coloring.

The cupcake theme was focused on pink and princesses, so I added some pink pearls and some lovely crowns to top it all off!

Mini Oreo Cupcakes

I found this recipe on the internet and decided to make a "mini" recipe of it!

The cupcake consists of chocolate cake and a mini Oreo inserted into the bottom.

The cupcake is frosted with an Oreo Cream Cheese frosting and topped with a mini Oreo!

I had so much fun making these, not only because they were easy to do, but they were so yummy to eat!

Whopper Cupcakes

This recipe came out of one of my cupcake recipe books and is truly one of my favorite cupcakes!
The cupcake is made up of yellow cake, malt powder, and Whoppers! My mouth is watering already!
The frosting is a Chocolate Malt Frosting, sounds weird, but its SO GOOD! Finally, the cupcake is topped with crushed Whoppers for those with a sweet tooth!

Cinnamon Toast Crunch Cupcakes

I saw these on Pinterest and had to try them! Work seemed to love them as well!

The cupcake consists of a vanilla cake and cinnamon along with some mouthwatering ingredients to tie it all together.

The frosting is a cream cheese frosting with cinnamon and Cinnamon Toast Crunch pieces added to it and a piece of cereal to top it off!

A truly delicious dessert that I enjoyed making!

Snickerdoodle Cupcakes

I love making new flavors of cupcakes and when I saw these -- I had to try them!

Snickerdoodle Cupcakes are made up of a vanilla cake and cinnamon. Yum, right? Even without the frosting, they double for a delicious breakfast muffin! The frosting is a cinnamon vanilla buttercream with a cinnamon sugar topping -- guaranteed to satisfy your sweet tooth!

Black Bean Brownies

I was told about these at work and so I tried some and loved them. I had to make some of my own.

All you need: can of black beans, box of your favorite boxed brownie mix, can of water and you're set!

Preheat your oven to 350 degrees F. Drain your beans and fill the bean can up with water. Mix in with your brownie mix in a medium sized bowl and pour into a greased 8x8 pan. Bake for 30 minutes or until firm in the middle.

Funfetti Cake Batter Buddies

A friend made these at work and I had them already pinned on my Pinterest boards, so I decided to make some.

Super easy with only a couple of ingredients -- almost think it's easier to make this than puppy chow!

White Almond Bark, Funfetti Cake Mix, Vegetable Shortening, Rice Chex, and a little Powdered Sugar....so yummy!

Watermelon Baby Carriage

Last June, I was in charge of the fruit for my sister in-law's baby shower, so being the creative person I am, I wanted to carve something. I got online, did some searching and finally came up with what I have here.

Inside the carriage is watermelon, cantalope, muskmelon, strawberries, blueberries, and raspberries with a honey lime juice syrup.

Very easy to make -- once I carved the watermelon and scooped it out, the rest was easy!

I used a melon baller to make the fruit shapes. They're are a lot of different shapes to make the fruit. I just used the circle shape. :)

Red Velvet Cookies with Cream Cheese Frosting

What You Will Need for the Cookies:

- 1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
- 1/3 cup milk chocolate chips
- 1 tablespoon unsweetened cocoa powder
- 1/4 cup butter or margarine, softened
- 1/4 cup sour cream
- 1 tablespoon red food coloring
- 1 egg
What You Will Need for the Frosting:
1 8-ounce package cream cheese, softened
1/2 cup butter (1 stick), softened
2 teaspoons vanilla
5 1/2 to 6 cups powdered sugar

Instructions:
1. Heat your oven to 375 degrees.
2. In a large bowl, sitr the cookie mix, cocoa, chocolate chips, butter, sour cream, food coloring, and the egg together. Soft dough will form.
3. Shape 1" round balls and place them 2" apart on a ungreased cookie sheet.
4. Bake for 8-9 minutes. Cool for 2 minutes and then move to a wire rack. Cool completely.

While, the cookies are cooling, its time to make the frosting.
1. In a large bowl, beat cream cheese, butter and vanilla with a mixer on medium speed until light & fluffy.
2. Gradually add in the powdered sugar. If you add, all of the powdered sugar at once, you will have a mess everywhere. Speaking from experience. :)



When the cookies have completely cooled, frost each cookie with a dollop of the cream cheese frosting. Can be served as is or you may refrigerate them before serving. :) Enjoy!
